Fried Rice Cubes

This may be an ordinary dish, but who would have thought that such an ordinary and humble dish can be so versatile and delicious.  In fact, Fried Rice Cubes is one of my children's favourite dishes, mainly because they can have any ingredients of their choice put inside it!

Well, yesterday the form 6 group of teachers, had a small potluck, which I am sure was one of many of ther potlucks in the future.  Anyway, I made rice cubes and Kuah Lodeh i.e. Lontong.  Of course, I always prepare extra for the home.  But since my children do not fancy Lontong so much, there is an excess of rice cubes left in the fridge!

And so, after a few jazz chants by my youngest, Fried Rice Rubes it is (again!)

300g rice cubes
200g minced chicken meat
1 egg, beaten
4 cloves garlic, minced
4 shallots, minced
3 tbs chili paste
1 cup mixed vegetables
2 tbs oyster sauce
2 tbs tomato ketchup
2tbs vegetable oil
Shallots crisps, chopped parsley and spring onion for garnishing

Heat oil in a wok then saute the garlic and shallots, followed by the chili paste.  Fry until aromatic, then add the minced chicken meat until it half cooked.  Stir in the oyster sauce and tomato ketchup and pre-season with salt and pepper.  Then stir in the rice cubes and mix evenly with the other ingredients.  Push the content of the wok to on side, pour in the beaten egg and scramble it.  Once egg is cooked, mix with the rest of the ingredients.  Check seasoning again.  Dish into a place, garnish with shallot crisps, parsley and spring onions and serve hot!
