Cheese Swirl Cake

My son is going back to campus again.  He's been here since last Saturday, for his study week.  Well, he's wise enough to spend only a few days of his study week here and the rest in campus.  At least when he's there, the aura of other flatmates studying will rub off onto him.

I thought I'd make something for him to take back to his room in campus.  Even though he may not like cakes that much, at least he can offer it to his room mate.  I cannot help but sympathize with the stories of students who actually do not have enough to buy food.  I mean, what parent can stand to listen to their children go through the days in campus, feeling hungry or trying to make a packet of rice last throughout the day.  Well, I hope one student will be happy with what my son brings for him this evening!

Ingredients A
  • 225 all-purpose flour
  • 35g cocoa powder
  • 3/4 tsp baking powder

Ingredients B
  • 175ml milk
  • 110ml corn oil
  • 1 egg + 1 yolk
  • 230g soft brown sugar

Ingredients C
  • 70g cream cheese
  • 40g icing sugar
  • 1 egg white
  • 1/2tbs lime juice
Beat all of ingredients C together until smooth.  Set aside.  
Sift ingredients A into a large bowl and set aside.
Beat all of ingredients B until frothy then pour into ingredients A and fold well.  Pour this batter into a 7-inch x 7-inch cake tin.  Drizzle ingredients C onto the batter and, using a toothpick, make swirls on top.  Bake in a pre-heated oven at 180 C for abaout 40 minutes.  Best served warm!
