This Friday the 26th of October will mark yet another religious festival for the Muslims. It may not be as grand as Idul Fitri which was celebrated in August, but it is still a celebration nevertheless. And when it is Raya, kids (and the kids-at-heart!) will want cookies to usher in the celebration.
I mean, cookies are not such a big thing for Idul Adha, but since there was a request by a certain little girl (my youngest daughter!) who wanted to make one (after flipping through my Delicious Baking cook book!) Thank goodness, she chose a simple one since making cookies was not in my list of things-to-do! But, as one smart person once said (don't remember who!) it is the process that matters! And I enjoyed making Snowballs with her!
- 100 g butter, softened, plus extra for greasing
- 150 g icing sugar
- 150 g AP flour
- 25 g chopped walnuts
- 25 g chopped almonds
- Grated zest of 1 lemon
Preheat the oven to 180 C. Cream the butter and 75 g of the icing sugar until soft and fluffy. Stir in the flour. Add the nuts and lemon zest, and mix together until they form a dough. Knead lightly. Cover in cling film and chill for 30 minutes.
Roll into walnut-sized balls and bake on a lightly greased baking sheet for 10 - 12 minutes. Allow to cool slightly then tip into a large bowl containing the rest of the icing sugar and toss to coat. Leave to cool completely.
