Daisy Lime Cupcakes

Actually it's just my excuse to use up all the limes (well, almost all!) that's been in the fridge for almost a week.  They were bought mostly to make 'sambal belacan' and also Iced Lime Tea (in place of lemons!)  Or sometimes when we've run out of ideas on what to use them for, the limes end up being used to wash the pots and pans, especially greasy ones!  They really do the job well!  Of course, they're nice in cakes as well!


This is one of those cakes that you simply must have with the icing, no matter how calorie-conscious you are! Because one bite into the soft cake plus the icing, just simply gives you that zing from the tang of the lime and immediately gives you rays of sunshine!  A little poetic there, but it really does!  Actually, we've been having a lot of sun this past month, so much so that it really is getting unbearable!   So, don't forget the Iced Lime Tea!
  • 4oz self-raising flour
  • 4oz caster sugar
  • 4oz margarine
  • 2 eggs
  • 1/2 tsp baking powder
  • 1 tsp lime juice
Cream the margarine and sugar until pale.  Beat in the eggs one at a time.  Stir in the lemon juice followed by the flour and baking powder.  Scoop into cupcake liners and bake for about 20 minutes in a pre-heated oven at 160 C.

For the icing, simply gradually stir in just enough lime juice into 125g of icing sugar to make a smooth slurry.  Spoon onto the cooled cupcakes and decorate as desired.
