Udang Goreng Berempah/Spiced Prawns with Breadcrumbs

It really doesn't help if you oversleep for Sahur.   I would usually get up at about 4.30 a.m. and help the missus to prepare the meal.  But there is always that particular time when all of us oversleep, even when the alarm clock rings until it breaks down!

So, in order to prepare a hot meal for the family, it helps when you can prepare something as quickly as possible; something that you actually prepare the night before.  This Spiced Prawns with Breadcrumbs takes just eight minutes (or thereabouts, if you're not too sleepy!) to prepare and my kids found them to be finger licking.

  • 600 g large prawns, deveined
  • 4 shallots, pounded
  • 3 cloves garlic, pounded
  • 1 thumb size ginger, pounded
  • 1 tbs fish curry powder
  • 1/2 tsp ground black pepper
  • 1 tsp anchovy stock granules
  • 1/2 tsp sugar
  • 1 sprig curry leaves
  • 1/2 cup golden panco breadcrumbs
  • 3 tbs vegetable oil 

Mix all the ingredients, except the last three, and place in a covered container.  Leave to marinade in the fridge overnight.  Before cooking the prawns, drain all the marinade and set it aside.  Heat the oil and fry the prawns until half cooked.  Dish out and set aside.  In the same oil, saute the curry leaves then add in the reserved marinade.  Cook this until the mixture is dry and continue to fry in the oil.  Stir in the breadcrumbs and add in the prawns.  Cook for a further one minute.  Serve immediately.
