Caramalised Bananas with Butterscotch Sauce

As with every recipe which is created out of necessity, this banana recipe went through the same process.  We had a comb of ripe bananas hanging near the window sill for a few days and no one seemed to want to eat them.

So my wife decided to fry the bananas in butter until they were caramelised.  Once the bananas were ready she stared at them and asked me how she could make it more interesting, like maybe having the bananas with some sauce, butterscotch sauce for example.  She asked me if I knew the recipe for butterscotch sauce and so I gave an eyeball recipe of the sauce for her to make (and adjust!)

  • 6 ripe bananas, peeled
  • 2 tbs butter
  • 1/2 cup caster sugar
  • 3/4 cup cream 

Melt the butter in a pan and then fry the bananas until slightly caramelised and set aside.  Bring the heat to low and add sugar to the remaining butter in the pan.  Cook the sugar until slightly golden brown then whisk in the cream.  Continue to cook this mixture until the sauce thickens.  Then pour onto the bananas and serve.

Note: We had this for breakfast!
