Simple Roast Chicken for Potluck!

This morning we had another potluck session in our staff room.  In fact potlucks have become like a trend here in our room, that every time we want to have one, it becomes almost like an event; everyone planning what to bring!

Well, today was no different.  Our senior assistant told us that he wanted to bring some chicken to school and we immediately decided that we should have a potluck!  As simple as that!  To go with the chicken, one colleague brought coleslaw, another brought fruits and our MUET teacher brought custard pudding and a bottle of sweet chili sauce!

I had wanted to bring some baked potatoes but had forgotten all about it.  I was busy baking a Trio Marble Cake (for my sister-in-law), that I totally lost track of time and forgot all about going to the shop to buy some potatoes!  Back to the chicken, my senior assistant shared his simple recipe with us, and here it is! (By the way, his recipe is for two chickens!)

  • 2 chickens, spatchcocked
  • 1 bottle Barbecue sauce (he used Kimball, regular-sized bottle)
  • 1 tbs granulated sugar
  • 2 tsp salt

Clean the chicken and rub all the ingredients onto the chicken.  Leave to marinade in the fridge, overnight.  To cook, place the chicken in a pot and cover tightly.  Place in a pre-heated oven at 220 C and cook for 45 minutes.  Leave the lid on until the end of the cooking process to get moist chickens.

Note :  The cooking procedure is an alternative.  My senior assistant made cooking easier by using the pot in the picture!
