Prawn Fritters/Cekodok Udang

Once in a while, it is good to have something fried for breakfast.  It beats having the bland and tasteless (I'm being redundant here!) mug of instant oats that I have every morning.  It feels good to munch on something savory and at the same time dipping the food into some sweet chili sauce!  Yumm!

Actually the batter for this fritter had been sleeping overnight in the fridge; and the rest of the ingredients had been prepared and put in their separate containers in the fridge.  In fact, this recipe is so simple, it's just a matter of preparing before-hand and just mixing them, and then spooning the batter into the hot oil to fry!  And in less than ten minutes, I had some piping hot prawn fritters for breakfast!

  • 3 cups AP flour
  • 1 tsp baking powder
  • 1/2 cup corn kernels 
  • 1/2 cup diced onions
  • 1/2 cup diced potatoes
  • 1/2 cup chopped garlic chives
  • 1/2 fresh prawns, chopped
  • 1/2 tsp salt
  • 1/2 tsp white pepper
  • 1 cup water
  • 4 cups vegetable oil

Mix all the ingredients together (except the oil) to form a smooth batter.  Allow the batter to rest for about half an hour.  Heat the oil in a wok.  Take spoonfuls of the batter and drop into the hot oil.  Fry until golden brown and place on absorbent kitchen paper.  Serve hot with some sweet chili sauce!
