Lemon Squares

This is something that I made earlier but didn't have the time to post (as with a few other recipes coming your way in the next few days! Haha!)  But, whatever it is, this dessert is definitely suitable for an open house.  Of course it is sweet, but it also has that lemony tang that can cut through all the savory treats you've been during all those many open houses!
This recipe from Simply Delicious Slices was quite easy to make and has turned out to be one of my children's likes (the eldest at least!)

For the base:
  • 125g unsalted butter
  • 75g caster sugar
  • 155 g AP flour, sifted
  • icing sugar, for dusting
 For the topping:
  • 4 eggs, lightly beaten
  • 250g caster sugar (I used soft brown)
  • 60ml lemon juice
  • 1 tsp grated lemon rind
  • 30g AP flour
  • 1/2 tsp baking powder
 For the base, cream butter and sugar until pale and fluffy.  Fold in the flour and press into a 20 x 30cm  slice tin (I used ordinary cake tine) which has been greased and lined (two opposite sides over-hanging a bit)  Bake in a 180 C oven for 20 minutes until golden brown.  Cool.

For the topping, beat eggs until light and fluffy then stir in the lemon juice.  Sift the flour and baking powder into the egg and whisk gradually.  Pour onto the base and bake for 25 minutes or until just firm.  Cool in the tin, cut into squares and dust with icing sugar.

P.S. When baking the topping, you will notice the pudding brown too quickly due to the high sugar content.
