We have this nine year old girl who lives right next door to us with her family which consists of her parents and three other siblings.  My wife has been taking care of her ever since she was three months old.  We have grown quite fond of her and she in return, until now, continues to call us ayah and ibu (mum and dad)

Now that she is getting bigger, she spends less time in our home because she spends more time at school.  However, we still enjoy the small chats we have with her; topics which include a variety of things.  

Naturally one of the topics we sometimes talk about is food.  One fine day she told me that her aunt would be making this Tart Jepun (Maids of Honor) and that her aunt merely takes the recipe from the internet.  As usual, I was intrigued, so I decided to give it a try myself.  

Tart shell :

• 200 g AP flour
• 100 g margarine
• 3 tbs cold water
• A pinch of salt

Sift flour and salt into a bowl, then rub the margarine into the flour using finger tips until the mixture forms fine breadcrumbs.  Next, mix with water until dough becomes soft and manageable.  Leave to rest for 30 minutes.  Preheat oven at 180 C.  Roll the dough, cut into rounds and press into small tart tins.  Prick the base with fork and bake blind for about 10 minutes until slightly golden brown.  Leave shells to cool.

For the filling :

• 100 g caster sugar
• 100 g margarine
• 120 g flour
• 1 tsp baking powder
• 2 eggs
• 2 tbs strawberry jam
• 1 tsp vanilla essence

Beat the margarine and sugar until pale and smooth.  Add eggs one by one, followed by vanilla essence.  Stir in flour, a little at a time, until well incorporated.  Fill mixture into a piping bag.  Spoon a little bit of the strawberry jam onto the base of each tart shell.  Then pipe the filling into the shell.  In the preheated oven, bake tarts for 10 to 15 minutes.
