Blueberry and White Chocolate Muffins

I just love blueberries.  It's just the way they explode in your mouth when you bite into a mouthful of cake!  It seems we've been importing more blueberries nowadays compared to strawberries.  I have noticed that there are no differences between the berries imported from Holland, Indonesia (yes! Indonesia) and Argentina (like this batch!)  All just as sweet!

However, I do notice that the sizes differ!  Argentinean blueberries seem to be a bit larger than their counterparts and they don't seem to bruise easily either!  Anyway, whatever the differences, they are all gone now!  Devoured in the form of these muffins!
  • 150 g AP flour
  • 50 g caster sugar
  • 1/2 tsp baking powder
  • Pinch of salt
  • 1 egg
  • 50 g butter, melted and cooled
  • 100 ml milk
  • 75 g blueberries
  • 75 g white chocolate, chopped into chunks

Mix the first four ingredients together.  Meanwhile, preheat oven to 200 C and line a 6-hole muffin tin with paper cases.  Lightly whisk the egg, melted butter and milk, then, quickly mix into the dry ingredients together with the blueberries and white chocolate.  It goes without saying that a muffin batter should not be over-mixed and should be a bit lumpy!  Divide between the cases and bake for 20 minutes until golden and cooked through.
