Simple Fish Soup

The holidays in December saw me having a few episodes of binge eating, not so much on the amount of food I ate but more on the types of food.  I actually found a lot of happiness and enjoyment in foods that contained coconut milk, lots of butter, cheese and what-have-you. 

So, to start the new year, at least for January (followed by an evil smile!) I though I should ditch all the types of food mentioned above and try to stick to those that are less enjoyable but just as filling.  The easiest way to do this is to start with a simple fish soup.

  • 3 pieces Golden Snapper fillet (on the bone)
  • 3 cloves garlic, bashed
  • 1 small slice ginger, bashed
  • 1 small lemon grass, bruised
  • Bouquet garni of 1 cardamom, 1 clove, half star anise and 10 whole peppercorn
  • 1 Roma tomato, quartered
  • 1 anchovy stock cube 
  • 1 tbs vegetable oil
  • Salt to taste
  • Half liter water

Heat the oil in a pot and saute the lemon grass, ginger and garlic.  Once aromatic, add in the water, bouquet garni (tiied in amuslin cloth) and anchovy stock cube.  Bring to a boil, then put in the fish fillets and simmer gently until fish is cooked.  Remove the bouquet garni.  Season and add the quartered tomatoes right before turning off the heat.  Serve hot garnished with some spring onions and parsley.
