Ayam Goreng Tepung / Fried Chicken & Slaw

No, I didn't plan my leave so that it fell the after I was given a sick-day off.  In fact, I had planned this leave so that I could rest at home and forget the hustle and bustle of school and the unbearable attitudes that the students (some of them) throw at me!  At least, for today, I am miles away from them!

But my one-day abdication from being a teacher did not stop me from being a doting dad (sometimes, too doting!)  My youngest daughter knew that I would be on leave today, so for the past two days she had been hinting to me how nice it would be to have me fry some chickens for her; complete with a side of coleslaw!  I knew the fried chicken she was referring to, and being the doing father that I am, I obliged making the fried chicken; and the coleslaw!

  • 8 chicken thighs, deboned 
  • 5 cloves garlic, crushed
  • 1 thumb-size ginger, crushed
  • 1 tsp pepper
  • 1 tsp salt
  • 1/2 cup fresh milk
  • 2 tbs lemon juice
  • 1/2 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1 cup self-raising flour
  • 1/2 cup custard flour
  • 1 tsp chili flakes
  • 1 tsp salt
  • 1 tsp powdered chicken stock
  • 2 eggs, light beaten
  • 1/2 cup vegetable oil
  • 1 tbs unsalted butter

Place the chicken thighs in a sealable plastic bag, together with the garlic, ginger, pepper, salt, milk, lemon juice, oregano and thyme.  Mix the chicken pieces with the marinade and leave in the fridge for at least two hours or longer (if you have the time)

After two hours, take out the chicken pieces, pat them dry with some kitchen paper and discard the marinade.  Place the beaten egg in one casserole and the self-raising flour/custard flour/chili flakes/salt/powdered chicken stock mixture in another.  In the meantime, heat the oil and butter in a pan.  Immerse a piece of chicken in the beaten egg and dredge in the flour mixture.  Repeat this process with the rest of the chicken pieces.

Fry chicken pieces for about 4 to 5 minutes on each side until golden brown.  When cooked, place on absorbent kitchen towels and serve hot with the coleslaw!
