iii. Kunjungan Sulung
It has been quite a while since I baked a cake and the day we went visiting my sister-in-law and her husband was a good opportunity for me to bake again. All I knew at that time was I wanted to bake an apple cake.
When we arrived at my sister-in-law's house, we ourselves were taken aback when we found out it was actually her birthday. My sister-in-law is not used to celebrating birthdays so the absence of special food on the table or anything of the sort was not surprising.
Since we had coincidentally brought the apple cake, my wife decided that the cake be that something special, not to celebrate her sister's birthday, but as a small present from us.
- 1 1/4 cups AP flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp ground cinnamon
- 1/4 tsp ground ginger
- 2 eggs
- 1 cup soft brown sugar
- 1/2 cup butter
- 1/2 cup plain yogurt
- Zest and juice from 1 lemon
- 1 tsp vanilla essence
- 2 apples, sliced
Preheat oven to 180 C. Grease an 8-inch springform cake tin. In a mixing bowl, combine flour, baking powder, ginger, cinnamon and salt. Set aside. In another bowl, beat sugar and butter until pale and fluffy. Then, beat in eggs one at a time. In a separate bowl, mix the yogurt, lemon zest, juice and vanilla essence. Fold in the flour mixture in thirds alternating with the yogurt mixture, ending with the flour mixture. Pour cake mixture into the prepared tin, then arrange the apple slices on top of the cake. Bake for about forty minutes until cake is cooked.
