Trying to come up with something new that this terribly picky eater would eat is a daunting task, to say the least. The food must fulfill this child's specific needs, not that she has any special needs. But she scrutinizes the choice of food that she wants so much so that the variety becomes so limited.
The carbohydrate part of the meal should not be rice; noodles, pasta, vermicelli, yes, but not rice. However, when the range of dishes for her favorite carbohydrates have been all but exhausted, she will have rice but only specially cooked rice like Nasi Minyak or Nasi Goreng Kampung or Nasi Tomato or the likes.
So, it really came as a big surprise, after exhausting all the ideas from which we could choose from to satisfy this picky eater, she finally settled for something so simple that it was mind boggling. This simple steamed brown mushrooms succeeded in satisfying her need for something different to eat; with plain white rice no less.
- 15 brown button mushrooms; stalks removed and chopped
- 250 g ground chicken meat
- 1 spring onion chopped
- 1 tsp chicken stock granules
- 1/2 tsp ground white pepper
- 3 tbs oyster sauce
- 1 tbs light soy sauce
- 1 tsp sesame seed oil
- Spring onion slices for garnishing
Prepare the mushrooms by removing some of the gills; use a teaspoon to scrape. Set aside. Next, in a bowl, mix the first five ingredients, plus the chopped mushroom stalks, together and use this mixture to fill the mushroom caps. Place mushrooms onto a plate. Mix the sauces and the oil then pour over the mushrooms. Steam for about 15 minutes until chicken is cooked. To serve, sprinkle the spring onion slices on top.
