Kek Salji Strawberri / Snowy Strawberry Cake

It's the weekend and all my kids are home.  The two that are in university are back for their mid-semester holidays.  So, the kitchen has been a hive of activities with people moving in and out, taking plates, dishing food, chatting, laughing and what-have-you.  The kitchen almost never closes, especially since my second child likes to have her dinner very late at night.

And they have asked me to bake a cake; something new for them to try.  I immediately knew what they meant!  They wanted something that would tickle their tastebuds.  Once again, I am not in the mood for baking, so I decided to make this no-bake cake with lots of cream, which my kids love!

  • 3 cups whipping cream
  • 1/2 cup icing sugar
  • 1 tsp vanilla essence
  • 1 1/2 tsp strawberry emulco
  • 15 pieces crackers (I used Tiger's)
  • 10 strawberries, hulled and sliced
  • Some strawberry syrup (optional)

Whisk the whipping cream until it reaches soft peaks.  Carefully mix in the sugar, vanilla essence and strawberry emulco. Spoon a thin layer of the cream into the base of a 9 x 3 dish.  Layer the biscuits to cover the cream (cut some to fit the odd corners)  Next spread 1/3 of the remaining cream, smoothen surface with a spatula and then arrange a layer of the sliced strawberries.  Repeat this step two more times.  Cover the dish with cling film and refrigerate for at least four hours for it to firm up.  To serve, slice the cake, place onto a place and drizzle some strawberry sauce on top.  Enjoy.
