This entry is especially dedicated to my sister who has been gone through many years of difficulties.  She has for many years, volunteered to take care of our late mom, who was inundated with countless ailments.  Now that our mom has passed away, she has to take care of her ailing husband who has just recently had his leg amputated.  But above all those difficulties that life has thrown at her, she has remained the rock that, not only her husband and her son can count on, but in fact any one and every one who knows.  And under all those dark circumstances, this sister has managed to camouflage her tears behind her smiling and hardworking exterior.

It's the weekend and the start of a two-week long school holiday.  I've got a lot of things planned for the next week, especially marking and grading students' mid-year exam answer scripts.  And marking students' scripts, especially unintelligible and illegible scripts, can be demanding, both on the brain and the nerves.  I really cannot control my emotion and I start to turn green like the Hulk when I get too many of these scripts!

There are some things you have fun doing them, and this cheat's version of Tiramisu is one of the many puddings that I had fun making.  Of course, I would like to begin by extending my sincere apologies to all Italians, for turning one of their national desserts into something less spectacular.  However, besides its simplicity (this version!) it does not lack the taste of the real thing (if my memory serves me right!)

Carrot & Pineapple Cake with New Toy

Two things instigated me to make this cake today.  One, the wife has been nagging me to use up all the bits and pieces of everything in the fridge that can be used for baking.  And, secondly (wait for it!) I got a new toy!  After many moons of waiting,  I finally got my bundt cake mould (mould not pan, since it's silicone!!!)

Okay.  I just have to say that I have nothing against celebrating a mother's love for her children even though it may not be done on the much touted Mother's Day come the second week of May every year.  I say that a mother's love is something worth celebrating because a mother's love is unconditional and having said that, we should not have a steadfast rule on when to celebrate it; certainly not so far as to have a Mother's Day.  And with that I say that a mother's love should be celebrated every day (of course not too often because then it will not be considered special!)

Mini Chicken Pies

This batch of mini chicken pies was made especially for tea today, at the request of my family members.  It was a grueling task trying to get everything done; from rolling the pastry, to lining the cupcake pan (yes! I used the cupcake pan!), to putting the filling and finally baking them.  Grueling because it was such a hot day, that initially, I didn't find the idea of baking pies by a hot oven, very appealing.  But the requests of my family came first (plus I love baking!)

Beef Ribs with Jackfruit

There are some food that I try to avoid but my family seem to love them.  Take beef ribs for example.  I have long made a huge attempt to avoid eating ribs at all cost even though I was the one who prepared the dish.  And the dish can turn out to be so delicious that everybody in the house would be smacking their lips in agreement; but I would remain steadfast in my resolution that I shall not eat beef ribs.

Another tea-time treat made from the heart!  Why?  Because I so enjoy making this simple treat that I could make it again and again (but I won't! Hehe!)  And it is such a difference making it using filo pastry compared to the short crust pastry (sort of!) that I have been using all this while.

Daisy Lime Cupcakes

Actually it's just my excuse to use up all the limes (well, almost all!) that's been in the fridge for almost a week.  They were bought mostly to make 'sambal belacan' and also Iced Lime Tea (in place of lemons!)  Or sometimes when we've run out of ideas on what to use them for, the limes end up being used to wash the pots and pans, especially greasy ones!  They really do the job well!  Of course, they're nice in cakes as well!
